Tapioca Stories and Recipes - by Morena Leite

Tapioca: it is our white pearl, our Brazilian jewel, extracted from the gum of our great root, cassava! Tapioca flour is so versatile that it inspired me to create different recipes. In addition to our traditional tapioca crepe, we can also use it as sago, in sweet and savory dishes. There is also granulated tapioca, with which we can make a wide range of incredible recipes. This type of granulated flour brings texture to the dish, absorbing the flavor and colors of the other ingredients that are added to it! For me, our tapioca is a delicacy that reflects very well the phrase that inspires me every day in my creations and that I carry in life: 'The height of sophistication is simplicity!'
