Agribusiness is a consolidated sector in the country and is going through a period of unprecedented growth, which, considering its economic relevance, is reflected in the increasing demand for training professionals in Food Engineering — a relatively new field of study when compared to other branches of Engineering. Given this scenario, Unitary Operations in the Food Industry represents the academic strengthening of this discipline and the commitment to expanding studies of the food industry in Brazil. The efforts of dozens of teachers and researchers generated a book designed pedagogically for university students taking courses that require this knowledge. Each chapter presents the theoretical foundations of the proposed topic, along with a description of the main equipment involved in the processes and examples of the most frequent situations in industrial activity. It also includes a list of exercises aimed at systematizing learning.
