Traditional Feijoada Recipe
Ingredients:
500g of jerky
300g salted pork ribs
2 salted pig's feet
1 salted pork tail
1 salted pork knuckle
500g black beans
2 bay leaves
3 chopped onions
6 crushed garlic cloves
2 pepperoni sausages, sliced
2 slices of bread
Black pepper to taste
Oil for sautéing
Method of preparation:
Desalt salted meats (jerky, ribs, feet, tails and pork knuckles) by soaking them in water for 24 hours, changing the water a few times.
Cook black beans in a large pot with water and bay leaves until they begin to soften.
Cook the desalted meats separately until tender. Reserve.
In a large pan, sauté the onion and garlic in oil until golden.
Add the cooked meats, pepperoni sausage and paio. Saute for a few minutes.
Add the cooked beans with part of the broth to the meat pan. Mix well.
Let it cook over low heat for about 1 hour, until all the flavors are well integrated. Add black pepper to taste.
Serve hot, accompanied by white rice, farofa, sautéed cabbage and sliced orange.
