Carreteiro Rice with Charque Meat Recipe
Ingredients:
500g desalted beef jerky, cut into cubes
2 cups of rice
1 large chopped onion
3 cloves of garlic, chopped
1 chopped green pepper
2 ripe tomatoes, chopped
3 tablespoons of oil
4 cups of boiling water
Green chives (parsley and chives) to taste
Salt and black pepper to taste (if necessary)
Method of preparation:
Heat the oil in a large pan and sauté the onion and garlic until golden.
Add the beef jerky and sauté until it starts to brown.
Add the peppers and tomatoes, and cook until the vegetables soften.
Add the rice and mix well, ensuring that the rice is enveloped in the flavors of the stew.
Pour in the boiling water, adjust the salt and black pepper if necessary and mix.
Reduce the heat, cover the pan and let it cook until the rice is tender and the water has been absorbed.
Turn off the heat, add the chopped green chilli and let it rest for a few minutes with the pan covered before serving.
