Dry meat or charque is a cured and salted beef meat widely used in Brazilian cuisine, in feijoada or beans.
Tropeiro Beans with Dried Meat Recipe
Ingredients:
500g desalted and shredded dried meat
2 cups of cooked pinto beans
1 chopped onion
2 crushed garlic cloves
200g diced bacon
200g calabresa sausage, cubed
3 eggs
1 cup cassava flour
Green chives (parsley and chives) to taste
Salt and black pepper to taste
Oil for sautéing
Method of preparation:
In a large pan, sauté the bacon and pepperoni until golden. Remove and reserve.
In the same pan, add a little oil if necessary and sauté the onion and garlic until golden.
Add the shredded dried meat and sauté for a few minutes. Season with salt and pepper to taste.
Add the eggs and stir until they are cooked and mixed with the meat.
Add the cooked beans, reserved bacon and pepperoni.
Gradually add the cassava flour, stirring constantly to avoid lumps.
Finish with chopped green chilli, adjust seasoning if necessary and serve hot.
